I would be okay with eating a CARNE ASADA BURRITO everyday til the day I died. In the meantime I'll just stick to looking for tasty, new, fun & creative recipes!

Marble Jell-o Squares


Ingredients:

1 (6 ounce) box red Jell-O gelatin (strawberry)
1 (6 ounce) box blue Jell-O gelatin (I used blueberry)
4 cups boiling water
2 envelopes unflavored Knox gelatin
1/2 cup cold water
1 1/2 cups boiling water
1 (14 ounce) can sweetened condensed milk
Directions:

1. In two separate rectangular pans (9x13-inch is fine), sprinkle each box of Jell-O gelatin. Add 2 cups of boiling water to each pan. Stir until the gelatin dissolves. Put in refrigerator for at least 3 hours, until the liquid turns into jiggly Jell-O.

2. Cut each flavor into small blocks. Carefully mix the blocks in a 9x13-inch pan.

3. In a different bowl, sprinkle 2 pouches of unflavored gelatin into 1/2 cup of cold water. When the gelatin blooms, add 1 1/2 cups boiling water. Whisk it together until it dissolves. Add the can of sweetened condensed milk. Stir and cool.

4. Pour the milk mixture over the Jell-O blocks and stick it in the refrigerator for at least 3 hours (or overnight).

5. Cut into squares or rectangles, and Bon Appetit.

Strawberry Margarita Jell-o Shots

Strawberry Margarita Jell-o Shooters
Since my family doesn't drink, I made these without the alcohol. I really had a blast making these treats for Memorial Day. I wanted to do something totally different, fun and creative.
To make the strawberries stand, you have to cut the bottoms off. Be careful not to cut too much off. ANY size hole will make the gelatin leak right through the bottom.


Strawberry Prep:

1. Cut the bottoms of the strawberry flat to get them to stand upright. When you do so, make sure that you do not cut off so much that there is a hole at the bottom.
2. Use a huller or apple corer to empty out the strawberry.
3. Once the strawberries have been emptied, use a towel to pat the outside of the strawberries dry.
4. Check each strawberry and make sure there is not a hole in the bottom before you start filling.

Margarita Mix

* 1 box Strawberry Jell-O
* 4 ounces tequila, preferably reposado or blanco
* 2 ounce Cointreau
* Salt for garnish

Instructions

1. Boil one cup of hot water in a saucepan, then add in Jell-o powder and whisk until powder is completely dissolved, about 2 minutes. Set aside. Measure out 1/4 cup of cold water and set aside.
2. Combine tequila and Cointreau, in cocktail shaker filled with ice. Add liquour mixture to cold water and stir to combine. Then add cold liquour mixture to hot Jell-o mixture and stir to combine.
3. Pour final Jell-o mix into strawberries and chill overnight. Dip your finger in water or use a moistened brush to wet the edge of the strawberries, dip and rotate the strawberries in salt to rim. Garnish with cut lime triangles to finish.
